You can still jolly well backstab foo's in 3, even use it as a punish. It's not like they need to work like they do in 1 to have stuff like that. All the techniques in PvP revolving around backstabs exist because for one, the game is designed poorly, and two, because unsurprisingly, such an overpowered move became a dominant strategy in PvP.

Sure but in DS1 backstab was such a cheesey and powerful method of crowd control it they needed to do something. You'd run into 3 mobs and just chain backstab them to death. The community was pretty happy with the idea of no invuln frames during the animation. Obviously they changed their minds, but it's harder to backstab now, so it works out.
